The coffee beans are partially digested by Asian palm civets – and this strange method of collecting makes Kopi Luwak rare and highly prized around the world. Asian palm civets are native to Sumantra and are known to locals as “luwaks.” They to eat red, ripe coffee cherries, where the beans undergo chemical treatments and fermentations. Once exited from their system, the intact beans are collected from the forest floor, cleaned, and roasted and ground by highly skilled artisans. The resulting coffee is like no other – with a rich, heavy flavor, the beans are accented with hints of caramel and chocolate.
